The ethnicity part comes from a number of non white races being lactose intolerant and assumes those people are all too poor to be able to afford the higher price for non-dairy alternatives. They ignore the fact that it costs more to produce those alternatives.
I also wonder what they think will happen to the cows if they are no longer raised for meat and dairy products. Do they think cows will disappear? If they were all just turned loose, the would breed indiscriminately, causing overgrazing and ultimately starvation in cow herds.
